strawberry & mint breakfast smoothie

18th May 2015
It’s been one of the busiest weekends for a while and I’m in dire need of fuel and energy before setting off to my next destination today, only a short trip back to my old University to give a little talk about my career as a blogger. So I’m starting the day right with a breakfast smoothie packed with goodness to get me through the day a head. I wish there was a smoothie to kill nerves. I’m petrified, public speaking couldn’t be further from my comfort zone. Anyway, my nerves are making me ramble. Mint is a favourite of mine, I love adding it to teas and infusing with cold water for a more refreshing taste. Adding it to smoothies hadn’t crossed my mind until I now You Will Need: 1/2 Cup gluten free oats 1/2 Cup 0% fat greek yogurt 5-8 mint leaves 7 strawberries 1/2 or 1 full scoop of PhD woman Exercise Support – Vanilla (optional) 1 cup Coconut Water 1 teaspoon Chia seeds from Kaizen Living (and sprinkle some on top for Instagram purposes) 1.5 teaspoon of Xylitol     As always, shove it all in (technical term) the Nutribullet, remove lid, stick in straw and enjoy!
