Whether you need an on the go healthy snack to hand in your bag, or a post workout pick me up, Carrie taught me how to make these energy balls about six years ago and they have remained a staple in our fridge ever since!
You Will Need –
1 cup dates
3/4 cup ground almonds
1/2 cup desiccated coconut
2 tablespoons chia seeds
1 tablespoon coconut oil
1 heaped tablespoon crunchy peanut butter
Place all ingredients in to a food processor and blend until the mix comes together. You may need to add slightly more peanut butter or coconut oil if your dates are very dry.
Roll in to 12 evenly sized balls and store in an airtight container in the fridge.
