skinny(er)-nana cake

The aroma of  freshly baked Banana cake instantly transports me back to my childhood. A time when fruit and veg were the enemy and my parents brains worked over time with trying to find out innovative ways to make them not appear so. Banana cake was about as close as I would get to fruit so it was baked in abundance. Their recipe may not have been all that healthy but it had the word Banana in it, so I assume it gave them reassurance. The other evening, Ali and I decided to rustle up our own little version of the age old favourite, but using slightly healthier ingredients. This is becoming quite the little project for us, finding healthier alternatives, because I’m pretty sure it’s the same for everyone but doesn’t happiness make you eat so much more crap! Since Ali and I moved in to our beautiful new home all we seem to do is treat ourselves, and not being the type to do it alone we always buy extra for the other. Basically a ‘if I’m getting fat you’re getting fat with me’, kind of thing. We couldn’t quite believe how tasty this recipe was, so much so that we made ended up making more for friends and family. You will need:

1 cup Spelt flour

1 cup Self raising flour

3/4 tsp Baking soda

1/2 tsp Salt

1/2 cup Stevia

1 Scoop of Light sunflower spread

2 Large eggs

3 Mushed bananas

1 tsp Vanilla extract

1/3 Cup of plain low fat yogurt

Zero Cal spray to grease baking tray

 

Step 1

Preheat the oven to 350 degrees and combine Spelt flour, self raising flour, baking soda and salt, all the while mixing with whisk.

 

Step 2

Place Stevia and Sunflower spread into a large bowl and beat with mixer until blended. Then add the eggs one by one continuing to beat after each. Then add the banana, yogurt and vanilla extract again beating until blended.

 

Step 3

Then add the flour mixture beating until moist. then spoon the mixture into your baking tray coated with Zero Cal spray. Bake for 1 hour at 350 degrees.

 

Step 4

Check the loaf is cooked all the way through, then remove from the oven and allow to completely cool.

 

Step 5

Serve on its own or with fresh fruit and low fat natural yogurt.
