You know Spring is near when the baking begins, there’s nothing quite like a fresh cake on the cake stand and there’s nothing easier than a banana bread. I personally think enough time has passed from the panic baking we all did in lockdown and it’s ready for banana bread to have a rebrand.
I adapted the classic recipe from my Thermomix by using coconut sugar which gives it softer but deeper sweetness and also that darker warmer colour, I actually popped this back in the oven for a few minutes to let the crust go extra crispy and to allow the banana that I pushed into the top of the cake and sprinkled with coconut sugar, to caramelise….and now I’m craving a slice!
