the quickest, easiest & most delicious kale recipe

Kale, a vegetable so fashionable it has it’s own slogan tee. It’s quick, easy and packed full of nutrients not to mention it’s versatility. It can be used in smoothies, baked to make chips (see recipe here) or simply used in salads. But today’s recipe is probably one of my favourites. I really struggled with greenery growing up and now I constantly strive to make it more exciting to ensure I’m always getting enough for what my body needs and this easy yet tasty recipe ticks all my boxes.  [lem_title]Remove The Stalks[/lem_title] Kale grows on tough stalks and whether you are buying it from your local green grocer or supermarket you will probably need to remove these yourself, they aren’t particularly tasty and can be quite difficult to digest so I always sift through the leaves and make sure all the stalks are gone and I do so with a super sharp knife. I then thoroughly rinse the leaves under cold running water so to remove the earthy flavour which can sometimes be found on kale.   [lem_title]Marinate[/lem_title] To season the kale I squeeze half a lemon all over the leaves followed by some sea salt, a drizzle of garlic infused olive oil and a few table spoons of water, if I’m feeling adventurous I may add some chilli flakes. I then toss the seasoning over the leaves using clean hands, place a plate over the bowl and leave for around 30minutes or however it takes to cook up the rest of my meal, to marinate.   [lem_title]Microwave[/lem_title] Once the rest of my meal is ready to serve, leaving the plate covering the bowl of seasoned kale, I place it in the microwave for 2 minutes in order to thoroughly steam the kale ready for serving and 2 minutes really is all […]

Remove the bowl and drain the excess water from the bottom ready to serve with your meal of choice.

I’ve literally never had a facial like it!
The plum tree in our garden is always the first blossom to erupt at this time of year narrowly beating the much loved aubretia that grows in abundance through our old garden wall. As soon as is acceptable I’m out with my secateurs ready to fill vases and prickly jars with its delicate confetti like blooms 🌸
