skinny-nana pancake recipe

Pancakes! Oh Pancakes! They have a hold over me like no other to the point that Shrove Tuesday is more anticipated than Valentines day in our house hold. I wish that was a joke. The thing with pancakes is, they are sneaky little fu…whatsits. They’re all like “look at me being all eggy and floury n shit, there’s nothing of me, your love handles are safe, don’t worry about it” but what they fail to mention is they taste like an old mattress unless you submerge them in an entire tub of Nutella, Oh and I heard on the grape vine that if you cut a “love handle” open, Nutella oozes out. True story!Anyway, this dilemma lead me to search for healthier versions to bring the joy back in to those weekend breakfast in bed sessions that are pretty much all I look forward to in my old age. You will need 1 Ripe Banana1 EggCoconut OilCinnamonManuka HoneySummer Berries (optional) Step 1Mash up the banana until a smooth as possible and add the egg.Step 2Sprinkle the Cinnamon into the mixure.Step 3Melt a knob of Coconut oil in the pan in place of butter and pour the mixture in.Step 4Allow the Pancake to cook through and then flip to brown the other side. Sometimes the mixture can be a tad runny and getting the right consistency can take a few attempts. Step 5Drizzle over some Manuka honey and add some berries. If you are feeling a bit naughty you can add some Skinny frozen Yogurt to the equation but if you do that, you might as well get the Nutella out. and on that note, enjoy!

You will need

Cinnamon
Manuka Honey
Summer Berries (optional)

Step 1

Step 2
Sprinkle the Cinnamon into the mixure.

Step 3
